Our cuisine is based on traditional recipes handed down from generations that preserve the genuineness and taste of the past, thanks also to the careful selection of local and first choice ingredients.
The dishes are prepared using only products of the "short chain", or produced by us or food purchased directly from agricultural producers in the area.
This guarantees freshness, quality and seasonality of the product. The aromas and flavors of the kitchen are enhanced by the refinement of extra virgin olive oil produced from our land - BIOLOGICO and DOP TERRE DI SIENA. Typical cured meats, wild boar, pecorino cheese with jams and honey.
Fresh pasta made strictly by hand: PICI, PAPPARDELLE, RAVIOLI, GNOCCHI. Traditional sauces: AGLIONE, RAGU 'OF TUSCAN TRADITION, SUGO ALL'OCIO and the BOAR.
In some periods of the year you will also find the renowned RIBOLLITA, the FEGATELLI, CINGHIALE IN UMIDO and PEPOSO DI CHIANINA.
