The cuisine of the Masseria is characterized by the search for the oldest and most authentic dishes of the rural culinary tradition of Salento. The vegetables, flours, cereals, oil, preserves and fruit are all produced on the farm, strictly using an organic method, as are the milk, eggs and farmyard animals.
Guests can watch every morning the production of bread, tarallini, frize and focaccia cooked in the wood oven and the orecchiette and pasta that will be offered for dinner. The nearby farms provide delicious cheeses, such as mozzarella, burrata and canestrato, as well as the best lamb and Podolico beef.
Depending on the seasons, the dishes are enriched with cardoncelli mushrooms, asparagus and wild vegetables, expertly harvested by the most expert farmers.
And at the end of each meal, you will find in the limoncello, myrtle, laurel and the many other rosoli produced according to the ancient recipes of the monks who lived in the Masseria the happy synthesis of the most intense aromas and flavors of the land of Puglia.
