Besides the already mentioned bread of Altopascio, here is a list of the other typical products belonging to the local gastronomic tradition;
THE WINE The particular composition of the soil of the surrounding hills, the sweet climate and the perfect exposition to sun, represent an ideal setting for the Montecarlo vineyards: thanks to all this they only produce healthy, sugary, very perfumed grapes that confer a unique aroma. The colour is an intense straw yellow, the alcohol percentage is around 11.5 degrees.
The red wine production is also notable. D.o.c. since 1985, clear ruby red and with a dry and velvety taste. The "Colline lucchesi" wine (white and red), "doc" since '68, comes from the grapes of the vineyards grown in a wide area between the towns of Lucca, Capannori and Porcari. This wine, highly appreciated in the international market, was among the first in Italy to be awarded with the controlled origin denomination.
EXTRA VIRGIN OLIVE OIL
The extra virgin olive oil of the Lucca hills is an highly genuine and very famous product. It comes from the clean olives, they are smashed and squeezed, picked up by the olive groves in the surroundings of the town, which have been famous for centuries. This olive oil owns very rare organoleptic features, a unique fruity flavour, a brilliant and golden colour, but also a high digestibility. The production of the real olive oil from Lucca is made by artisans and it is limited.
THE TYPICAL CAKE OF LUCCA, “IL BUCCELLATO”
The ancient recipe of the buccellato, one of the most famous cakes of the area, is composed by the following ingredients: flour, sugar, anis seeds, beers yeast, raisin, yolk. To enhance the flavour we suggest to wet it in slices in milk or in red wine. It is in the menu of all the typical trattorias of the center.
FARRO, THE TYPICAL SOUP FROM LUCCA
Very unknown cereal elsewhere but commonly used in the centre of Italy the farro is a quite soft variety of wheat, introduced by the Etruscans, passed on to the Romans and so on up to our days. It is grown especially in the areas of the Valle del Serchio and it has always been one of the basic ingredients of the Lucca recipes.
PORCINI MUSHROOMS
Many woods and the particularly humid climate favourite the presence of many types of mushrooms.The Porcini mushrooms are highly appreciated, as well as the galletti and the prataioli. The people who goes picking usually use the hilly paths mostly in the period betwwen June and October. During these months it is possible to taste them in all the restaurants of the area.
Other products worth mentioning are the asparagus and the honey from Lucca.
