Simple recipes, excellent combinations: the “fossa” pecorino cheese with a sauce of pears and typical mustards, the farro soup with small squids, the original Tuscan “fettunta” with San Donato in Poggio 1643’s olive-oil, the porcini mushrooms of the woods nearby cooked “in different ways”, the “Chianina” fillet with peppers, the whole-wheat noodles fool of vegetables, the farmer's rags with ragu, and much more. Each course is served with the wine produced with the grapes of the farm house or with other Tuscan wines personally selected by Marzio.
