The wine The total area of our vineyards is 2 hectares, divided into two separate plots: the vineyard "historic" Montepulciano 2532 and the new plant more recent achievement. The first extends on the east, on average slope of land characterized by the regularity of this ventilation to every precious temperature range, especially useful phenomenon in the morning, when, together with the first sun, quickly erases any excess moisture on leaves and clusters. Thanks to this phenomenon of our vineyard "historic" is particularly protected from mold and rot in the advanced stage of maturity, as well as from the attack of the most common plant diseases of the vine throughout the growing season. This peculiarity is a very beneficial factor given that we chose the organic cultivation method. The sixth plant is classic with rows wide and 3 m distance between the logs of 1.80 m. The method of pruning is mixed between Guyot and Cordon The base ampelographic the vineyard consists of gentle Blackthorn (Sangiovese) 80%, Canaiolo Nero, Mammolo and Colorino. The vineyard's most recent achievement is in position facing south-east, always with an average gradient on a markedly tuffaceous maintained grassed. The plant is characterized by a density of 4400 plants per hectare, more bred in close rows (rows 2.50 m wide). The plant is grown in spurred cordon with inter-row distance of 0.80 meters high from the ground wire and between 0,50 and 0,80 m. The small distance from the ground, allowing the cluster optimal ripeness thanks to the microclimate that is established in the presence dall'inerbimento even in the less easy vintages. The ampelographic base is mainly made up of various clones of Sangiovese, accompanied by Colorino and Merlot. Pruning is marked throughout the vineyard to the principle of limitation of quantity in favor of quality. Since the dry pruning, still in the period of green pruning and thinning out of excess bunches, our goal is to contain the yield per hectare below the maximum allowed by production regulations. The time of harvesting, the height of around 550 m. above sea level, generally it coincides with the second week of October for Sangiovese and a few weeks before for Merlot.
The Oil The olive groves cover an area of about one hectare and a half for a total of about 400 plants (including olive trees in production and new plants). The relatively small size allows us to use the classical method of hand picking and lead to crushing within 24 hours of harvesting olives absolutely intact and degree of ripeness. This is the simple secret of the tradition joined to the cold pressing technique and decanting without filtering allows to obtain a product that can restore the uniqueness of flavors and scents of this corner of Tuscany. The blend of different cultivars is the traditional one: the Correggiolo representing the basic variety, Leccino which guarantees a high resistance to frost in the coldest years and gives the oil a delicate and round note, Moraiolo characterized by lower production and less constant, but absolutely necessary for fruity bitter and spicy notes which gives the product. And finally the Pendolino, beautiful to behold for his behavior "weeping", similar to that of the willow, always present in the olive groves with few but essential subjects by virtue of his "pollinator" function. The extra virgin olive oil of Montepulciano 2532, available in classic square bottle 0,375Lt or 0.75 lt.
