Geografic location Fiorentine hills of Chianti.
Altitude abaut 300 metres on the sea level.

The story soil and the sunny exposure are the most important aspects to obtein a high quality extra virgin olive oil together with various varieties of olive mixed in precise percentages as follows: Frantoio 60%, Moraiolo 30%, Leccino e Pendolino ed altri. The tradicional hand –picking method, which allows not to alter the olives , is efected from the beginning of November for immediate cold olive pressing according to criteria rigorously almed at the attainment of a quality product of which the fragrance, flavour and colour are exalted.The decantation process is also natural and effected in typical terra cotta oil jars.

EXTRA – VIRGIN OLIVE OIL CHARACTERISTICS
Acidity level 0,15-0,25%. Colour intense green tending to golden yellow in the log run. Flavour intense strongly marked, aromatic, wild herbis fragrance. Taste rich, savoury-lightly sweet-bitterissh. Botting system unfiltred Limpidy naturally dull.

Suggested uses Tuscan traditional and typical diches, pinzimonio sauce, soups, legumes, vegetables, bruschetta (toasted bread), grilled meat and fish and all other disches for which raw olive oil is a palatable dressing.
